Tasting note
From a unique environment of diverse vegetation, with palm trees, fig trees, white carob trees and a beautiful jacaranda tree. The resulting unique wine reflects minerality and wild herbs, is richly juicy with balanced acidity and tannins, and a floral palate.
Viticulture
El Porvenir's most elevated and biodiverse estate, Alto Los Cuises, is located on steep slopes, deep in the Sierra del Quilmes. They use the Inca farming method of planting Malbec and Chardonnay on established terraces. Here you will find mortars made by local indigenous tribes, as well as abundant native flora and fauna, guaranteeing ecological balance.
Vinification
Fermented in concrete eggs with 5–10% whole clusters and native yeasts. Pump-overs are avoided, with the cap gently wetted by hand only 2–3 times. The wine is racked with residual sugar, pressed, and undergoes malolactic fermentation, then ages 12 months in used French oak and 1 year in bottle before release.
Food Match
Grilled vegetables, lean cuts of meat like filet mignon, roasted poultry, or even dishes like mushroom risotto. Charcurterie and mild cheeses.
