Viticulture
From deep, rocky soils with Andes irrigation and a wide thermal range of about 22°C, this dry region (120mm rainfall, 15% humidity, 350 sunny days) shapes intensely colored wines. Cold mornings and nights with long hot days yield concentrated aromas, flavors, and a distinctive fruity character.
Vinification
Hand-harvested grapes undergo pre-fermentation maceration at 8°C in stainless steel. Fermentation uses both native and selected yeasts, followed by malolactic fermentation with oak contact. 70% ages 12 months in French and American oak, while 30% rests in stainless steel before the final blend.
Food Match
Hard, full-flavoured cheeses and cold cuts are well suited. Beef in all its glory, grilled, roasted, barbecued are an ideal match.
