Tasting note
Pale gold in appearance with brilliant silver highlights and crystal-clear clarity. Displays excellent aromatic finesse with notes of yellow fruits, white peaches, fresh herbs, and delicate peppery hints, all underscored by a signature smoky, flinty minerality. Broad and rich yet perfectly balanced on the palate. Crisp citrus flavours - like grapefruit and Meyer lemon - are complemented by notes of white peach and a subtle saline finish.
Vineyard
This wine comes from the 2.5 ha of old vines of the Rochoy monopole. Its flinty terroir in Saint-Satur and low yields produce grapes with particularly concentrated aromas.

Certified organic vineyard, careful observance of nature, control of grape vigor/concentration, yield control, terroirs selected for their quality.
Vinification
Low-pressure pressing, cold stabilization and thermoregulation of alcoholic fermentation. Our white wines undergo partial malolactic fermentation, which promotes microbiological stability and allows for very limited use of sulfites. Aged for 11 months with regular stirring (6 months), 50% in stainless steel vats, 40% in barrels, 10% in amphora
