Tasting note
Pale, radiant gold with luminous silvery-straw highlights. An expressive and elegant nose opening with ripe stone fruits, mandarin and citrus blossom. It is layered with delicate white flowers, green apple and a distinct mineral touch reminiscent of gunflint and chalk. Fleshy, succulent and full-structured. The rich, fruity roundness of the stone fruit is beautifully enlivened by herbal nuances and a subtle nutty, honeyed depth. It is an opulent style of Sancerre, but remains finely poised with vibrant freshness and intense mineral tension. Long, persistent and clean, leaving a crisp and refreshing minty aftertaste.
Viticulture
The Comtesse is planted on a prime south facing marly and chalky slope in the village of Chavignol. This extremely steep plot of land which comes from kimmeridgian marls enjoys exceptional sunshine and soil conditions.
Vinification
Hand-picked grapes ferment for 10 days in stainless steel tanks at 15°–20°C after low-temp racking. No yeasting or malolactic fermentation is used. The wine matures on fine lees for 5 months, is vacuum-bottled in dark glass with natural corks, and undergoes one month of bottle aging before its official commercial release.
Food Match
Really great with grilled fish, roasted bass with fennel and all other seafood.
