Tasting note
Spicy wine from an admired village in the southern Rhône, bursting with blackberries and perfumed with liquorice and sloe.
In the press
92/100 - Violets and blackberries, very ripe, juicy and appealing. Good structure, pure fruits and a long finish. Very well balanced, very well made. Destemmed fruit. In conversion to organic. Drinking window: 2025-2030.
Viticulture
Grenache and Mourvedre grown on clayed limestone at yields of 30 hl/ha. 100% hand-picked and selected following strict ripeness checks.
Vinification
Traditional method with destemming, no yeast added (wild fermentation), pigeage, long fermentation at 26°C. Maturing for 10 months in vats and in barrels.
Food Match
Rich and full of anise spice, this wine makes a wonderful pairing with oriental rubbed pork cheek.
