Tasting note
Black Stallion's winery was formerly the Silverado Horseman’s Center covering 32 acres along the southern end of Silverado Trail, but the land is now given over to cultivating vines. This Chardonnay shows a lovely deep yellow colour, a rich nose of buttery apple with honeyed and toasty notes.
Vinification
Barrel fermented for a month with full malolactic fermentation. Malolactic fermentation softens the wine’s acidity and enhances the body of the wine. The barrels were stirred weekly to suspend the yeast. This action develops a rich and complex palate. The wine is aged sur lees for fourteen months.
