Tasting note
Ruby red, with aromas of cherry, rose petals, and white pepper with a hint of vanilla. Medium-bodied with fine tannins. Good acidity that provides freshness and a fruity, long, and well-balanced finish.
Vineyard
Guarilihüe vineyard us unb the Itata Valley, located 22 km from the Pacific Ocean). Cinsault was planted in 1975 País back in 1905. The vineyard boasts granitic soils from various sectors and exposures. The fruit is primarily sourced from lower-lying areas, characterised by higher vine vigour and larger berries.
Viticulture
Traditional dry-farming (secano) in the vineyard, head-trained vines, and horse-ploughed soils. All vines are grown on their own roots (ungrafted).
Vinification
Hand-harvested on March 16th and destemmed followed by a 3-day cold soak to preserve fresh fruit aromatics. Fermentation in stainless steel tanks using native (unselected) yeasts at temperatures between 20–22°C. Pump-overs performed 3 times every day. The wine is then aged in used oak barrels (all over 14 years old) for 12 months.
Food Match
Serve slightly chilled if possible. A great accompaniment to tuna and salmon dishes, fresh summer salads, cheeses, pizzas and pastas. A veritable vin de soif!
