Tasting note
Blended from several varietals, the resulting wine is an exotic mix of citrus, stone fruits, passionfruit, guava and pineapple, which develops into a long and savoury finish with hints of candied ginger. The mouthfeel is rich and luscious without being overly oily, kept in check by a fine line of mineral acidity.
Viticulture
The grapes used in this wine are sourced from around the McLaren Vale region.
Vinification
The grapes are gently crushed before being pressed in stainless steel basket presses. The juice is then transferred to temperature controlled tanks, where it is inoculated with yeast, starting the fermentation process.
Food Match
The classic match is shellfish & seafood, however also pairs extremely well with grilled halloumi.
