Tasting note
Australian Sauvignon Blanc, bursting with personality and with tropical fruit including fresh-cut pineapple, kaffir lime and citrus, wrapped in the scent of lemongrass and just-snapped snow pea.
Viticulture
warmer than average temperatures during the growing period with low rainfall produced characterful fruits, fruit grown in Adelaide Hills using biodynamic processes
Vinification
Small batches of grapes are gently crushed, chilled and then pressed by a stainless steel press. Gentle extraction of the juice is critical to retain the delicate fruit characterstics. To add complexity and mouthfeel a small percentage of the wine is partially fermented in French oak for 2-3 weeks
