Tasting note
Dark and vibrant ruby red colour with a purfumed bouquet of red and black berries. A unique mouthcoating freshness combined with flavours of red cherries, black plums, strawberries and herbs de Provence. Fine and velvety tannins are intergrated, with an savoury and long finish, perfect for every occasion
Viticulture
Winter and spring rains resulted in high vigour with a heat wave during set reducing yeild. Warmer nights in the later part of ripening helped the last sugar push to result in an exceptional quality wine with great colour, fruit characters, flavours and length
Vinification
Small batches are gently crushed and then transferred to open fermenters. The batches remain separate until final blending. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and transferred to French Oak. The barrel ferments are aged on lees, and there is no racking until final blending
Food Match
Shepherd's pie with lamb, smoked turkey, roasted pork loin, or manicotti with marinara sauce.
