Tasting note
The intense and brilliant colour perfectly expresses the polyphenols of a very successful Nebbiolo. On the nose it develops gradually its richness; the initially fruity and spicy aromas envelop notes of sour cherry and raspberry, while hints of cocoa and vanilla make the bouquet even more intriguing
In the press
Plums and ripe strawberries with some crushed-stone undertones. Full-bodied and layered with round, rich tannins and an intensely fruity finish. But then, some fine tannins that are cashmere-like. A little tight at the end. From organically grown grapes. Drink after 2024.
Vineyard
Undoubtedly Barolo's most famous vineyard. The soil composition and the vineyard's perfect southern exposure give the grapes grown here an extraordinary uniqueness. Here, both Tortonian and Helvetian soils blend seamlessly, along with a significant percentage of sand.
Viticulture
Vines grow on Cannubi’s historic hillside with calcareous marl soils and ideal sun exposure. Guyot-trained vines are hand harvested at optimal ripeness, with low yields ensuring concentration, finesse and clear expression of terroir.
Vinification
Grapes are gently destemmed and fermented in stainless steel with extended maceration for structure and aroma. Ageing in large Slavonian oak casks refines tannins while preserving Cannubi’s elegance, complexity and aromatic precision.
Food Match
Medallions of venison with port and cranberries; lamb chops with minted potatoes and zucchini or grilled sirloin steak with anise basil butter.
