In the press
Good, firm fruits are well placed, with notes of cedar, liquorice and cassis – this really is an enjoyable Talbot that offers the promise of a long life. There's enjoyable grip and tenacity through the palate, with spicy, flexible tannins. It has a substantial weight that fleshes out and deepens. It's savoury in the French sense of 'savoureux', with connotations of juiciness and a 'give me more' appeal. Aged in 50% new oak.
Viticulture
A year of two halves, beginning with a dangerously humid spring that necessitated rigorous organic management to combat mildew, followed by a glorious, drought-like summer. This perfect late-season ripening produced small, concentrated berries with exceptionally high tannin and alcohol levels, resulting in powerful wines with real purity and ageing potential
Vinification
Hand harvesting, using lot selection. Fermentation in stainless steel tanks at temperature controlled. Maceration: 3 weeks. ageing in Oak barrels, 50% new oak.
Food Match
A fantastic match with fillet of beef with a red wine sauce, but will pair very well with any red meat dishes, game or strong cheese.
