In the press
Good, firm fruits are well placed, with notes of cedar, liquorice and cassis – this really is an enjoyable Talbot that offers the promise of a long life. There's enjoyable grip and tenacity through the palate, with spicy, flexible tannins. It has a substantial weight that fleshes out and deepens. It's savoury in the French sense of 'savoureux', with connotations of juiciness and a 'give me more' appeal. Aged in 50% new oak.
Viticulture
The 107 ha Château Talbot vineyard surrounds the estate and extends north to the Pauillac border. Its fine Günzian gravel and fossil-rich limestone soils create excellent drainage. Of the vines, 102 ha are red and 5 ha white. Harvesting is done entirely by hand, employing around 180 skilled pickers.
Vinification
Hand-harvested grapes with careful lot selection. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a three-week maceration and ageing in oak barrels, 50% of which are new.
Food Match
A fantastic match with fillet of beef with a red wine sauce, but will pair very well with any red meat dishes, game or strong cheese.
