In the Agly Valley, near the village of Maury, the vines are planted at the foot of the Cathar castle of Quéribus, 40 km away from the Mediterranean sea. Clay and limestone soils. Yield: 40hl/Ha. Viticulture: Light ploughing. Green harvesting.
Vinification
Alcoholic fermentation between 20 and 25°C, soft extraction by plunging down the cap.
