In the Agly Valley near the village of Maury, the vines grow at the foot of the Cathar castle of Quéribus, just 40 km from the Mediterranean Sea. Rooted in clay and limestone soils, they are tended with light ploughing and green harvesting, producing refined wines with yields limited to 40 hl/ha.
Vinification
Alcoholic fermentation between 20 and 25°C, soft extraction by plunging down the cap.
