Tasting note
Silky Bordeaux, packed with red and black fruits, the nose an enticing cloud of herbs.
In the press
Shows really well despite the difficulty of the vintage. Full body, complex and beautiful with black truffle and spice. Wet earth. Firm tannins. Lively.
Viticulture
The Château La Gaffelière vineyard is superbly-situated: oriented towards the south, and covering 25 hectares, 22 of which are in a single parcel between Châteaux Ausone and Pavie. Hillsides are calcareous clay, while the lower slopes are more sandy. The vineyard is planted with 80% Merlot and 20% Cabernet Franc.
Vinification
Manually harvested grapes from each parcel are vinified separately. After cold maceration and yeast inoculation, fermentation occurs with pump-overs and cap punching at 28°C. Malolactic fermentation in new barrels and tanks softens the wine. Blended in winter, it matures in oak and is bottled after 10–12 months.
Food Match
To match with duck fillet, mushroom risotto, cheese.
