Tasting note
Uncomplicated, yet utterly delicious organic Provençal rosé, with wafts of raspberry, pear juice and lychee on the nose. The palate is soft and easy, with a balancing tang and, a lovely, pure, sustained finish.
Vinification
The grapes are harvested in the cool of the night, limiting the risk of oxidation. This is followed by direct, slow, gentle pressing, minimising contact between skins and juice, to preserve freshness and lightness, and avoiding excessive colouring of the juice. This is then kept at a low temperature to preserve its delicate aromas.
