Tasting note
The 2021 displays a deep golden straw hue with subtle reflections. Initial aromas include grilled notes, lemon, and orange zest. With aeration, hints of white peach and flowers emerge. The palate is rich, with a lively start leading to a long, persistent finish. Aging enhances flavor and aromas, culminating in fresh, candied citrus notes.
Unique Selling Point
A dry white made from our grapes harvested on the verge of botrytisation from the Sauternes plots. We went for the same blend of grapes as we do with our Sauternes wines to show the true typicality of the Sauternes terroir.
Viticulture
The whites are also harvested on our Sauternes plots which due to climate change have a hard time reaching optimum maturity with Botrytis. This gives us a unique window to make an excellent white wine.
Vinification
In temperature-controlled vats and barrels. Aging of 6 months in 45% stainless steel tanks, 45% in one year Sauternes barrels, 10% in new oak barrels.
Food Match
Poultry, matured cheeses, oysters and carpaccio of scallops.
