Tasting note
Aromas of grapefruit peel, citrussy combined with exotic fruit aromas. A range of flavours on the palate, echoing the aromatic experience on the nose. Luscious, generous, yet elegant and zippy on the palate.
Unique Selling Point
Ningxia is located in central-western China on the fringes of the Gobi desert and feeds off the Yellow River. The arid land and longer sunlight hours than normal during the growing season (around 3,000 – compared with Bordeaux’s 2,000 average) leads to full ripeness, although at 1,100 meters above sea level with cold nights the wines retain their freshness.
Vinification
Lenz Moser learned to make white wine from red wine grapes in the poor 1996 vintage in Austria, and he has applied this knowledge to the Cabernet fruit of Ningxia. Made by pressing the grapes extremely gently yet quickly (just 10 minutes) to bleed the juice without retaining colour from the skins.
