Tasting note
Vivacious Grenache from the Barossa Valley, savoury and complex, with red fruits including cranberries in the mouth and a nose-full of aniseed and spice.
In the press
92/100 - Bright and red-fruited with aromas of raspberry bush, cherries, citrus peel, dried flowers and licorice root. The palate is vibrant and crunchy with a plush mouthfeel and fine-grained tannins. Made from 91-year-old-vines with 35% whole-cluster fermentation. Fresh and perfumed. Drink now.
Viticulture
Friend and vigneron Kevin Schild's grandfather and father planted these grenache vines with cuttings taken from another old Grenache vineyard - likely some of the earliest Grenache planted in the Barossa. The vineyard is in the sandy soils between the Vine Vale and Marananga parishes.
Vinification
From vines aged 93+ years planted on sandy soils in the Vine Vale district of Barossa, Pax Aeterna is made using a mix of whole-bunch and destemmed fruit, macerated gently and then aged for four months in large, neutral oak barrels and released early to express the frank, direct, delicious fruit of young Barossa Grenache.
Food Match
This could be a red for summertime drinking on its own but equally perfect for wild mushrooms, charcuterie, and dishes with some complex herbs such as tarragon.
