Tasting note
Intense and nuanced, bursting with crushed berries, violets, and black tea, with undertones of stony minerality and graphite. On the palate, the wine is fresh and vertical. You can expect flavours of red currant, dark cherry, and blood orange, underscored by chalky, needle-fine tannins and a long, saline finish.
Viticulture
The 2018 vintage in Gualtallary was a "classic" and exceptionally balanced year, characterized by warm, dry days and the region's signature cool mountain nights that preserved high natural acidity. The absence of significant rain during the late ripening period allowed for a long, steady harvest, resulting in healthy grapes with intense concentration.
Vinification
Grapes harvested at 3 different times to capture optimal ripeness. Indigenous yeasts used for ferment. 70% whole clusters used for 1st 2 picks. 3rd pick was destemmed. A combination of 225l French barrique, and 500l roll fermenters used for ferment. Aged for 20 months in French oak. Small percentage in stainless steel for aromatic lift
Food Match
Grilled Ribeye or Sirloin with a fresh chimichurri sauce; the wine's acidity and structure cut perfectly through the fat of high-quality beef. Also works well with local Carbonada Criolla (a traditional Argentinian beef stew with dried fruits).
