Tasting note
Purple colour with red ruby tones. The nose offers elegant aromas of spices, and fresh herbs as thyme and rosmary, red berries, cassis and raspberries, with layers of cedar. The mouthfeel is full and rich with cassis, raspberries flavours and notes of black pepper and oregano. The finish is bright and fresh with finely grained tannins.
Viticulture
San Carlos Vineyard (1090m/3576ft). Alluvial origin. Loamy sandy soil with thick calcareous layers with rounded rocks on the bottom. 70% Sand - 20% Silt -10% Clay.
Vinification
This wine goes through an extensive cold maceration of 2-6 days at less than 50oF (10oC) to extract aromas. The juice is then fermented for around 14-20 days with a total maceration of approximately 3-10 days. Ageing for 11-13 months in 100% French Oak barrel: 30 – 40% 1st, 2nd and 3rd use barrels.
