Tasting note

Powerful and classic with hints of honey. Its notes are finely smoked and salty, very pleasant nuances of toffee, coffee, tobacco, carob beans, fig and and toasted almonds. Full length and rich palate.

In the press

Superb nose that has notes reminiscent of Rutherglen Muscat, toffee apple and polish. Beautifully weighted palate with huge intensity. The residual sugar is well judged and the salty finish is very long indeed. Such concentration. Drink 2021 – 2035.

It has a complex and very broad nose: very nutty and a touch of marzipan, fig, raisins and dried black plum. Still lots of a fruit, which combines perfectly with memories of wood, toast and pretty earthiness. A generous body, broad and showing an attractive leathery touch on the mid palate. It ends with honey and a salty touch. A lovely sweetness level (it is only just abocado). Fantastic sensation of spiced bread and fig bread. A great wine. Monovar guarantees the perpetuity of the best Fondillón. I cannot help but be proud. Drink 2019-2050.

Viticulture

Bodegas Monovar restores ancient Fondillones. Minimal intervention, handpicked Monastrell grapes ferment with indigenous yeast, achieving natural sugar and alcohol levels. 20 years of maturation yields a truly unique wine, unparalleled worldwide.

Vinification

Hand-selected over-ripened grapes of the Monastrell variety. De-stemming, fermentation for 3 weeks with frequent remontage (pumping over). End of fermentation with 16/18 degrees of alcohol and 30 grams of residual sugar content. Racked and aged for 20 years in 1,730-litre barrels of old American oak.
