Tasting note
A true love story to cabernet Sauvignon, it has a bold and elegant red wine with a deep, ruby colour and complex bouquet of blackcurrant, cedar, and spice. On the palate, it offers rich flavours of dark berries, vanilla, and a hint of tobacco, with velvety tannins and a long, lingering finish.
Viticulture
From Angélica Sur Vineyard, Paraje El Cepillo, San Carlos, Valle de Uco, Mendoza (Elevation: 1.100m) and La Pirámide Vineyard, Agrelo, Luján de Cuyo, Mendoza. 2021 slightly cooler than average temperatures. White varietal yields were low due to October frost. Red varietal yields were normal, with good concentration, moderate sugars and optimal acidity.
Vinification
The harvest is done by hand and the fermentation takes place in concrete eggs, small stainless-steel tanks and French oak roll- fermentors, at temperatures of 26-28°C for about 12-18 days. Total maceration of around 18-22 days. Aged in French oak for 18-24 months. First, second and third use barrels.
