Tasting note
Deep violet hue with captivating purple highlights. The nose reveals an inviting bouquet of ripe, concentrated dark and red fruits, intertwined with delicate floral aromas of violets and roses, complemented by subtle hints of chalky minerality and mocha. On the palate, it offers a rich and full-bodied experience, showcasing flavours of sweet spices.
Viticulture
Vista Flores Vineyard (1100m/3608ft). Alluvial origin. Loamy soil, with rounded rocks on the bottom. 80% Sand - 10% Clay - 10% Silt.
Vinification
This wine goes through an extensive cold maceration of 2-6 days at less than 50oF (10oC) to extract aromas. The juice is then fermented for approximately 8-16 days with a total maceration of around 0-12 days. Ageing: 11-13 months in 100% French Oak barrel. 35% new barrels.
Food Match
This pairs well with all red meat-based dishes, particularly prime cuts of beef and game meet such as Venison.
