Tasting note
Clay soils of Agrelo (Luján de Cuyo) provide the cassis core; Cooler temperatures of higher altitude Villa Bastías (Tupungato) lend sweet spice and eucalyptus; high altitude climate of El Cepillo (San Carlos) provides structure and spicy black pepper, and Altamira (San Carlos) give fresh aroma and elegant structure.
Viticulture
The 2023 wines will be among the most age worthy. After the October and November spring frosts which provoked a generalized reduction in yields, the climate was very dry with temperatures slightly on the warmer side. Low yields resulted in a harvest 2 to 4 weeks earlier than usual. The wines are quite elegant, with high natural acidity and low alcohols.
Vinification
This wine goes through cold maceration for around 3-7 days at 50oF (10oC). The juice is then fermented for approximately 12- 19 days with a total maceration of 2-10 days. 11-13 months in 100% French oak barrel (25-40% new, 2nd and 3rd use barrels).
