Tasting note
Inky colour, toasty aromas with blackberries and coffee. Flavours of violets, cedar, rich black fruit, vanilla and overtones of rosemary. Finishes lengthily with sweet raspberries.
Viticulture
Single vineyard planted in 1955. The vines are massale selection, original rootstock ungrafted, so there is nothing clonal about these vines. It is irrigated up to 4 times a year by traditional method of flooding, with water of maximum purity coming from the Río Negro. No sprays or sulphites; it is certified organic.
Vinification
Hand-picked, de-stemmed and full bunch. Foot-trodden and puched down by hand in open-top Wooden vats, cement and stainless-steel tanks. Indigenous yeasts. Aged in 600 litre x 43mm oak vats and barriques, 15% new barrels are bought each year (although not for this wine - no new oak).
