Tasting note
Bright cherry-red with vivid ruby or purple flashes. An intense, expressive nose of fresh red and dark fruits (strawberries, raspberries, blackberries and dark cherries) layered with wild Mediterranean scrubland herbs (thyme, rosemary, lavender), balsamic touches and a distinct stony, mineral edge. Fluid, medium-to-full-bodied and remarkably fresh. It features a well-balanced, vibrant acidity, fine-grained/chalky tannins and earthy or subtle bitter-chocolate depth backed by a clean, saline-mineral finish. Long, savoury and persistent finish.
Vineyard
La Servil is a place in an area of Fuente-Álamo with calcareous soils of sand and gravel. The old vines planted on a free foot define a fresh and fluid Mediterranean landscape with contained austerity and an earthy and saline tannin. It is an area of height, with deep calcareous soils that maintain low pH in wines with high alcohols. The low pH, high acidity and alcohol allow to work in a very natural way maintaining the SO2 at very low doses.
Viticulture
Dry farming, old vines, Pie Franco.
Vinification
2021 Mediterranean vintage. A cold, snowy winter (up to 80cm) restored soil moisture, followed by a cool, rainy spring and warm days with cool nights. September rains balanced ripeness and freshness. Hand-harvested, fermented in wooden foudres and open barrels, aged 11 months, then bottled unfiltered and unclarified.
