Tasting note
Deep gold, brilliant and dense, with golden highlights. Complex and generous on the nose. Ripe yellow fruits (peach, apricot), brioche notes, almond and a touch of honey. Coated minerality. Broad, oily, and structured on the palate. An unctuous and powerful texture, balanced by a zesty finish tension.
Vineyard
Bougros is situated on the west/south-west extremity of the seven grands crus of Chablis. This cuvée comes from a vine located on the top of the slope, so the exposure to the sun is excellent (south-west) The soils are from the Upper Jurassic period (Kimmeridgean only for this plot).
Viticulture
Soil maintenance is through ploughing exclusively. We always make a winter ploughing, more or less deep according to the circumstances. We also try to earth some vines up, which involves digging a furrow in the middle of the row so as to bring back some earth at the base of the vine plant and make a little mound.
Vinification
Soft and slow pressing to extract the best juices. Alcoholic fermentation with natural yeasts to respect the personality of each terroir. Malolactic fermentation 100%. The wine is fermented and aged on neutral oak barrels (already used 3 to 9 years) with
