Tasting note
Savoury nose. Toasted flavours of walnuts and rye sourdough and tamari. A really umami wine with the salty, sharp tang of umeboshi (fermented) plums. Rustic tannins and a firm, full finish.
Viticulture
The Altitude vineyard, rooted in clay and limestone soils, produces grapes that give this wine its distinctive character. The estate is currently in the process of converting to organic certification, reflecting its commitment to sustainable viticulture.
Vinification
Traditionally vinified and then aged in concrete vats for 6 months.
Food Match
For sophistication pair with blanquette de veau or for a more casual meal try veggie burritos.
