Viticulture
Sustainably farmed in the Languedoc by Aubert & Matthieu.
Vinification
The base wine is dealcoholized using a vacuum distillation process, where holding the wine in a vacuum lowers the boiling point of alcohol so it can be evaporated away without damaging the delicate flavours of the wine. Grape juice and natural aromas are then added.

Perfect as an aperitif or for celebratory occasions, this would even work with light, fruit-based desserts.
