Tasting note
Fragrant, appealing Valpolicella, wafting red berries and rose petals into the nose and red cherries and more roses into the mouth.
Viticulture
Vineyards are grown in the heart of Valpolicella Classico, on the hills of Negrar, at 200-250m above sea level. A temperature difference of over 15oC between day and night brings about a gradual increase in sugars, and an exceptional accumulation of aromatic substances, right up to harvest.
Vinification
Harvests were carried out manually exceptionally early in the year, in dry and breezy conditions. After maceration for 12 days, grapes were fermented at a temperature of 25°-28° in stainless steel tanks and hand pressed three times a day. After complete malolactic fermentation, the wine was refined in bottle for 2 months.
